VALENTINE'S DAY RECIPE FOR 2

Pan-fried Tuna Steak with Spicy Mango Salsa

Serves: 2

Preparation time: 20 Minutes

Cooking time: 15 Minutes

Nutrition per serving: 318 cals, 15g fat, of which 2g saturated fat, 11g added sugar, 0.9g salt

1-2 cloves garlic, crushed
1 red chilli, deseeded & chopped
Grated rind & juice of 2 limes
4 tablespoons cider vinegar
2cm piece fresh root ginger, grated
2 tablespoons freshly chopped mint
1 bunch fresh coriander, chopped
5 tablespoons vegetable oil
2 ripe mangoes, peeled & stone removed
1 tablespoon soy sauce or fish sauce
2 tuna steaks
Freshly ground black pepper

Method:

1. Defrost the Tuna steaks for 3-4 hours in advance and make sure they are completely thawed before using
2. Place the garlic, chilli, lime rind & juice, vinegar, ginger, mint, coriander and 4 tablespoons oil in a blender & blend
3. Add the mangoes, soy or fish sauce & blend briefly so that the salsa remains fairly chunky
4. Season to taste and transfer to a bowl until required
5. Heat the remaining oil in a frying pan or griddle pan
6. Season the Tuna Steaks on both sides with salt and pepper
7. Heat the remaining oil in a frying pan or griddle pan & cook the fish to taste.
8. Serve with your own choice of salad or new potatoes
