Baked Potato with Chorizo, Chilli and Broccoli Prepared and on the table in ten minutes.
Bake a Potato in the Microwave for ten minutes and leave to rest.
Fry chopped chorizo with four spring onions (finely chopped) and a little oil.
Chop the Broccoli spears finely and boil until tender and add to the fried onions and chorizo.
Add a large tablespoon of Creme Fraiche and mix together over the heat.
Chop red chillies very finely and sprinkle over.
Pour over the baked potato.
Enjoy - it is really scrummy.
This can easily be scaled up for more people.
